Attiéké: preparation, texture and Ivorian accompaniments

Attiéké is fermented cassava couscous associated with Côte d’Ivoire. Chilled, vacuum-packed, frozen and dried products do not share one method, so the package directions take priority.

Understanding the product

  • The grains should remain light and separate after reheating.
  • Ready-to-heat formats generally need little extra water.
  • Dried formats require accurate rehydration.
  • A light tang is normal in a fermented product.

Preparing and serving

  1. Read the directions and check storage requirements.
  2. Fluff before and during steaming or reheating as directed for the format.
  3. Add water gradually; too much makes it pasty.
  4. Serve with grilled fish, tomato, onion and chilli or a sauce of your choice.

Practical tip

Do not assume every pack is ready to eat. Maintain the cold chain and follow manufacturer cooking instructions.
