Akara: crisp black-eyed pea fritter recipe
An airy batter, simple seasoning and controlled frying.

Akara are fritters made from soaked and blended black-eyed peas. A thick, aerated batter and steady frying temperature produce a tender centre and golden exterior.
Ingredients for 4
- 300 g dried black-eyed peas
- 1 small onion
- Chilli to taste
- Salt
- Oil suitable for frying
Method
- Soak the peas, remove skins if necessary and rinse thoroughly.
- Blend with very little water, then mix in onion, chilli and salt.
- Beat the batter for several minutes to incorporate air.
- Fry small portions at about 170°C until golden, then drain.
Practical tip
Batter that is too thin spreads and absorbs more oil. Do not crowd the pan.

Use it promptly for the lightest texture. If necessary, refrigerate briefly and mix again before frying.
