Poulet DG combines browned chicken, ripe plantain and vegetables in a short sauce. Cooking each part in the right order keeps the flavours and textures distinct.

Ingredients for 6

  • 1.2 kg chicken pieces
  • 4 ripe but firm plantains
  • 2 carrots, 200 g green beans and 1 pepper
  • 2 tomatoes, 1 onion, garlic and ginger
  • Oil, salt, pepper and chilli to taste

Method

  1. Season and brown the chicken, then set aside.
  2. Cook onion, garlic, ginger and tomato. Return the chicken and cook it through.
  3. Fry or roast the plantain separately. Briefly sauté the vegetables so they retain some bite.
  4. Combine everything with the sauce for only a few minutes and serve hot.

Practical tip

Choose yellow plantains with a few dark spots. Always ensure the chicken is fully cooked.
