Poulet DG combines browned chicken, ripe plantain and vegetables in a short sauce. Cooking each part in the right order keeps the flavours and textures distinct.
Ingredients for 6
- 1.2 kg chicken pieces
- 4 ripe but firm plantains
- 2 carrots, 200 g green beans and 1 pepper
- 2 tomatoes, 1 onion, garlic and ginger
- Oil, salt, pepper and chilli to taste
Method
- Season and brown the chicken, then set aside.
- Cook onion, garlic, ginger and tomato. Return the chicken and cook it through.
- Fry or roast the plantain separately. Briefly sauté the vegetables so they retain some bite.
- Combine everything with the sauce for only a few minutes and serve hot.
Practical tip
Choose yellow plantains with a few dark spots. Always ensure the chicken is fully cooked.
