Whole or ground black pepper: use, dosage and storage

Black pepper comes from dried Piper nigrum berries with their outer layer intact. Whole peppercorns usually retain aroma longer than powder exposed to air.

Whole or ground?

A grinder controls texture and works on demand. Fine pepper disperses in sauce; coarse pepper builds an aromatic crust. Buy pre-ground pepper in small packs.

When to add it

  • Early for integrated heat.
  • Late for brighter aroma.
  • At the table for individual adjustment.

Do not grind over steam because moisture enters the mill.

Pairings and health

Use with tomato sauces, grills, stock, vegetables and marinades. Piperine is researched, but culinary pepper does not treat disease. Concentrated extracts may affect medicine absorption.
