Ceylon cinnamon or cassia: differences and uses

Identify the main commercial types and use cinnamon sensibly in food and drinks.

Cinnamon is dried tree bark. Ceylon cinnamon (Cinnamomum verum) and cassia products differ in flavour, structure and composition.

How to tell them apart

Ceylon sticks often have many thin, brittle layers and a delicate scent. Cassia is generally thicker, harder and stronger. For powder, check the botanical name.

Cooking uses

  • Infuse a stick, then remove it.
  • Add powder to porridge, desserts and spice blends.
  • Pair with ginger, clove, nutmeg or citrus.

Start small to avoid bitterness.

Health and coumarin

NCCIH does not clearly support cinnamon as a treatment or weight-loss product. Cassia may contain more coumarin; prolonged high intake may concern people with liver sensitivity. Food seasoning is not equivalent to supplements.

Can cinnamon replace diabetes medication?

No. Never change treatment without medical guidance.

Can a stick be reused?

It may be infused twice if dried promptly, but the second use is weaker.
