Chilli peppers: Scoville heat and safe cooking use

Choose suitable chillies, control the heat and protect your hands, eyes and guests.

A chilli does not have one predictable heat level. Two similar red fruits may differ greatly, so variety, labelling and cautious tasting matter more than colour.

Understanding Scoville ratings

The scale describes heat associated with capsaicinoids. Values are ranges because growing conditions and individual fruits vary.

Controlling heat

  1. Begin with a small amount.
  2. Let it disperse, then taste.
  3. Simmer a whole chilli for easier control.
  4. Serve hot sauce separately.

Capsaicin disperses better in fat than water. To rescue an overly hot dish, increase the whole sauce rather than water alone.

Safety and storage

Wear gloves for very hot chillies, avoid touching eyes and clean tools carefully. Cooking does not guarantee mildness. Refrigerate dry fresh chillies and store powder airtight.

FAQ

Does removing seeds remove all heat?

No. Much of the capsaicinoid content sits in the inner tissue attached to them.

Does chilli actually burn the mouth?

It activates heat receptors without raising the food’s temperature.
