Pèbè: how to use African calabash nutmeg
Flavour, preparation, dosage and pairings for this powerful Cameroonian spice.

Pèbè is the aromatic seed of Monodora myristica, a tropical African tree. It is called African or calabash nutmeg, but it is not the same plant as ordinary nutmeg.
Flavour and appearance
The hard brown seed smells warm, smoky, peppery and slightly nutmeg-like. Pre-ground spice loses complexity faster.
Preparation
- Toast briefly in a dry pan.
- Cool completely.
- Grate or grind.
- Add gradually.
Use in grilled meat, fish, tomato sauces and mbongo tchobi spice blends.
Benefits and caution
Laboratory studies of aromatic compounds do not prove a medical benefit in people. Treat pèbè as food, not medicine. Seek advice before concentrated use during pregnancy or alongside medication.
Storage
Choose dry, mould-free seeds without a rancid smell. Store airtight and grind only what you need.

Can pèbè replace nutmeg?
It can, but tastes smokier. Start with a smaller amount.
Must it be toasted?
No, although gentle toasting releases aroma; burning creates bitterness.
