Fresh or ground ginger: uses, benefits and storage

Fresh ginger supplies juice, citrus notes and lively heat. Powder is drier and more concentrated, so the two are not always interchangeable in equal amounts.
Choosing and dosing
Grate fresh ginger into marinades, stock, sauces and drinks. Use powder in dry blends and baking. Start with a small piece or pinch, then taste. Long cooking softens its bite; a late addition keeps it bright.
What research says
NCCIH notes that supplements, rather than food, have been studied most, including for certain types of nausea. Findings do not automatically apply to tea or sauce. Ginger may cause heartburn or digestive discomfort and can interact with medicines.
Storage
Keep dry rhizomes refrigerated without trapped moisture. Store powder airtight and dark. Discard mouldy ginger.

Must ginger be peeled?
Thin clean skin may be scrubbed; remove thick or damaged areas.
Does ginger cure colds?
No. A warm drink may feel soothing but does not replace medical care.
