
I have already introduced you to cassava which is a real staple food. It’s a plant that “we don’t throw anything away”:
The very rich leaves are used for cooking “Kpweum” (cassava leaves with palm nut juice), a very popular dish among the Beti. The roots which constitute the main food product of cassava are used for the preparation of several recipes such as fufu made from flour, fritters made from fresh cassava or flour. You can still make fries or just grill it. you can also simply boil them and then use the leftover boiled cassava. Today I present to you water fufu, it is a fufu made from fresh cassava. Simply reduce the cassava to a paste after soaking it and cook it as for flour fufu. It’s the amount of water that will determine the consistency of your fufu. some like it more or less firm
