
Tagine is a dish from the Maghreb countries of North-West Africa, prepared in a specific earthenware container that bears the same name. The recipe can consist of meat; semolina and vegetables; and the characteristic taste and aroma are provided by the tabil. This is a special blend of tagine spices consisting of: coriander, cumin, garlic and paprika.
Tagines are cooked over hot coals or wood. The container is made of clay and consists of two parts: the base, which is a deep bowl; and the conical lid. The dishes are cooked in tagines for a very long time, which is why they obtain an original and unparalleled taste.
